I suppose the justification is that we use a little bit of knowledge of Spanish and treat El as an article rather than merely a syllable of an unanalysed proper name: so a person from El Salvador is Salvadoran as a person from The Gambia is Gambian.
Proper names can have internal parts that can affect their usage. All references I can find on the net suggest the latter is what is used. Interestingly, we appear to refer to people of El Salvador as Salvadorans no 'i'.
